INGREDIENTS (Makes 18 tenders) | Chicken 1kg chicken breast 2 tsp salt 2 tsp garlic granules  2 tsp onion powder 2 tsp smoked paprika 1 tsp cayenne pepper 1 tsp black pepper | Flour Mix 300g plain flour 150g corn flour 2 tsp baking powder 1 tsp salt 2 tbsp garlic powder 2 tbsp onion powder 2 tsp paprika | Wet Batter 150g flour mix above  1 egg 300g cold sparkling water | Honey Buffalo Sauce 150ml buffalo sauce 4 tbsp honey 25g butter METHOD  Slice the chicken breasts into tenders, then toss with all the chicken seasonings until fully coated. Let them sit while you prep everything else. Mix together the flour mix ingredients. In another bowl, whisk 150g of the flour mix with the egg and cold sparkling water to make your wet batter.  Dip each tender into the dry flour mix first, then wet batter, then into the dry flour mix again for that craggy crispy coating. Do it in batches before frying, don’t let coated tenders sit out for long. Heat oil to around 170-180°C and fry the tenders in batches for 4-6 minutes until deep golden, crispy and cooked through. Let them rest on a wire rack so they stay crunchy. Add the buffalo sauce, honey and butter to a pan over low heat. Stir until glossy, smooth and slightly sticky. Toss the hot tenders in the honey buffalo until fully coated, then serve immediately with plenty of Hellmann’s Blue Cheese Ranch. #HellmannsRanch #RanchUK
