@erikalassiter: This collaboration with Mark Mumford at Silver Lining Studio was a pleasure. This is his original drawing (still available for a tattoo btw 😁) and a pattern (by Designed by Tasha) I had been wanting to make. As a busy artist, I never get the time to make what I want to make. So it was rare coincidence when he produced his drawing, I was working on this piece and well...it looked like they were meant to be together. Avocado Chicken Salad w/ Homemade Cilantro Lime Vinaigrette 🍋‍🟩🥑 Ingredients: Dressing: Handful Fresh Cilantro 1.5 Limes, juiced 2 tsp Salt 1 tsp Black Pepper 1/2 tsp Cumin 3 TBSP Red Wine Vinegar 1/2 C EVOO Chicken: Thin Chicken Breast Seasoning blend of- salt, pepper, chili powder, garlic powder, cayenne pepper, onion powder, cumin. For the Salad: Sweet Butter Lettuce Avocado Mexican Corn (or regular) Red Onion, diced Tortilla Chips, crushed How To: In a blender or food processor, add cilantro, lime juice, salt, pepper, cumin and red wine vinegar. Add EVOO as you blend. Taste and adjust seasonings accordingly. Season both sides of chicken generously with seasoning blend. Add olive oil to a cast iron skillet and pan fry about 4-5 min on each side. Use a meat thermometer to ensure 165° internal temp. Remove and set aside. Prepare your salad by adding greens, red onion, corn, avocado, cilantro, crushed tortilla chips and chicken to your bowl. Drizzle with dressing & toss.
