Steak & potatoes baby, AKA the dinner l could eat a variation of every day. Note - these steaks were huge so I'm over seasoning here. Season depending on thickness. You're not just salting it for flavor you're salting to help tenderize. Steak: The most important thing you can probably do is make sure they're room temp, otherwise you'll have a cold center and cooked outside. Leave on the counter for about 30-40 min prior to cooking. Again, depends on size of the steak. Heavily salt and pepper while it sits. You can use a meat tenderizer if you want but I just poke some holes in them with a fork. Once they're ready to go get your pan hot on medium high and use a high heat oil, like avocado oil. Add your steaks and for some this size I was searing for about 6 minutes each side for medium rare. Ideally, you don't want to move them around a bunch but I wasn't satisfied with the color on mine so I kept moving them. (Do as I say not as l do) 😉 Once I flipped it once I added one whole shallot sliced & a garlic butter mixture I made. That was about 3 tbsps butter, 2 garlic cloves minced and a handful of fresh thyme taken off the stem. Let the butter melt and start basting your steaks as they cook Try to keep moving the onions and garlic around so they don't burn. Poke the center of the steak with your finger to test doneness. If it's still super squishy it's still pretty rare. I like mine medium rare so I'm looking for a slightly firm center still with a little give. These were cut against the grain. You can google your cut of meat to see if you cut with or against the grain. Let rest for at least 10 min. Potatoes: Seasonings tend to burn when you're trying to achieve a crispy potato so wait till the end to season. I did fingerling potatoes and just did oil, salt and pepper. Put them all face down, cook on 400 for about 35 min. Flip them over and broil for about 5 min. When those are almost done melt some butter, fresh garlic and fresh parsley. Add in whatever seasonings you want here but these were enough for me. Once the potatoes come out drizzle the melted butter over the top and mix well. #fyp #steakandpotatoes #DinnerIdeas #steakdinner
