double chocolate pumpkin nutella stuffed muffins 🎃🍫 recipe: ¾ cup pumpkin purée (180g) ½ cup salted butter, browned (113g) ½ cup brown sugar (110g) ¼ cup granulated sugar (50g) 2 eggs (100g) ¼ cup greek yogurt (60g) 1 tsp vanilla 1¾ cups cake flour (210g) (all-purpose flour works too) ¾ cup cocoa powder (65–70g) 1 tsp baking soda 1 tsp baking powder ½ tsp salt 2 tsp cinnamon ½ tsp nutmeg ¼ tsp cloves ½ cup milk (120g) chocolate chips, for the inside mini chocolate chips, for topping nutella, for filling ( i didn’t have eggs so i added an extra ¼ cup greek yogurt (60g) to replace them!) brown butter until golden & fragrant. let cool slightly. mix pumpkin & sugars, then add the warm browned butter and mix. add eggs, yogurt & vanilla and mix until combined. whisk dry ingredients separately, sift in then fold into the wet ingredients. add milk and mix until just combined, then fold in chocolate chips. the batter will be VERY thick but should still be spreadable. line a muffin pan & fill with batter (i used a 4 oz scoop). top with mini chocolate chips. bake at 375°F for 5 min, then reduce to 350°F and bake for 20–25 min, or until a toothpick comes out with a few moist crumbs. don’t overbake! let cool slightly. use a chopstick to make a hole in each muffin, then pipe nutella into the center until filled.
