Sometimes the story comes full circle in ways you could never plan. For years, I would climb onto the roof of my restaurant to film videos for Facebook, Instagram and YouTube. I called myself “the crazy restaurant owner on the roof.” I knew I had to get outside the four walls of the restaurant if I wanted to tell a bigger story. Years later, I’m in Ireland sitting with Alan Clancy at DÍON, a name that literally means “roof” in Gaelic. Two restaurant guys on the roof, telling stories.
