@gwendolynfogel4: Hamachi Crudo, the long way. Every fillet came from something whole, and if you're going to eat it, you should know how to take the whole thing apart. Skin, bones, collar, all of it goes somewhere. Nothing wasted. I was able to kombujime cure the meat I wanted to use then quickly dress it with shiso, ponzu and fresh baby tomatoes from the market. Simple is best.
