Any cheese sold as "Parmesan" in Europe that doesn't meet those standards is a crime. In the US, the word means nothing. Anyone can use it. And they do. Castle Cheese supplied "100% Parmesan" to Target and 3,400 stores across 30 states — the FDA found zero parmesan inside. It was Swiss, cheddar, Havarti, mozzarella, and cellulose. The president pleaded guilty to criminal charges. 90% of "Italian-sounding" cheese sold in America — parmesan, mozzarella, gorgonzola — is produced domestically. The counterfeit market is worth $2 billion. Italy is now embedding edible microchips into real Parmigiano-Reggiano wheels to verify authenticity — because the fraud is that widespread. Real Parmigiano-Reggiano has three ingredients. American "Parmesan" has wood pulp, potassium sorbate, natamycin — an antifungal eye medication — corn starch, and calcium sulfate.
