This is a double batch recipe because I had so many bananas. #muffins #bananabread #snacks #baking #chocolate Double Chocolate Banana cupcakes Ingredients * 6–8 very ripe bananas, mashed * 1 cup Dutch-process cocoa powder * ¼ cup hot water * 16 tbsp (1 cup) unsalted butter * ½ tsp kosher salt * 2 cups packed brown sugar * 2 tsp vanilla bean paste * 4 large eggs * 1 cup Greek yogurt or sour cream * 4 cups all-purpose flour * 2 tsp baking powder * 1 tsp baking soda * 1 cup mini chocolate chips Instructions 1. Preheat oven to 350°F. Grease your baking pans well and line with parchment if desired. 2. In a saucepan, combine the brown sugar, cocoa powder, salt, hot water, and butter. Cook over medium-low heat, stirring, until the butter is completely melted and the mixture is smooth and homogeneous. Remove from heat and set aside to cool slightly. 3. In a large mixing bowl, mash the bananas until mostly smooth. 4. Add the eggs, Greek yogurt or sour cream, and vanilla bean paste. Mix until well combined. 5. Pour in the slightly cooled chocolate mixture and stir until incorporated. 6. Sift together the flour, baking powder, and baking soda. Fold the dry ingredients into the banana mixture just until combined. Do not overmix. 7. Fold in 1 cup mini chocolate chips. 8. Divide between prepared pans and bake at 350°F until the center is set and a toothpick comes out with a few moist crumbs 9. These make 72 mini muffins or 36 regular size muffins.
