french onion soup grilled cheese caramelized onions: 4 large yellow onions (about 1200g total) 3 tbsp (42g) unsalted butter 1 tbsp good quality olive oil 1/2 tsp (2g) salt 3/4 tsp (3g) sugar 2 tbsp dry sherry (or white wine, or water) *slice onions thin and then sauté on med/med-low with butter, olive oil, salt, and sugar. stir occasionally for 45-60 min until the onions are nice and caramelized. then add in the sherry (wine or water) to deglaze the pan. once the liquid is all absorbed, remove half the caramelized onions and set aside for the grilled cheese. keep the other half in the pot for the next step. soup (after caramelized onions) 4 cups (960g) beef stock 1/2 cup (120g) dry white wine 2 cloves garlic 3 sprigs fresh thyme 1 bay leaf salt & pepper to taste *to the pot with caramelized onions, add garlic and cook a bit. then add in the white wine and cook until its reduces to half. add in the beef stock, thyme, bay leaf, and some salt and pepper. let simmer for 30 min. then remove thyme and bay leaf. portion in bowls when ready. grilled cheese: 4 slices of bread (i used sourdough) 2 tbsp butter the remaining caramelized onions gruyere + mozzarella 2 tbsp mayo (optional) #frenchonionsoup #grilledcheese
