the problem is that they have two options. Saitama is a gag character meant to be immeasurably strong and have infinite potential, and his strength always be exponentially growing. so he’d obviously win. but they might go the alternate route of dismissing his gag and going off his feats only, which then goku obviously obliterates saitama because the max that saitama has done is destroy a generous chunk of a galaxy cluster and goku has nearly destroyed his universe.

The thing with saitama is that his power can grow infinitely to match his opponent so you would have to get into the hypotheticals. And Goku is over glazed using “feats” that were put there just for entertainment and even misinterpreted but people still use them as facts. In my opinion in a accurate battle saitama would win EVENTUALLY but would have to adapt to Goku first as Goku would not go all out at first and even if he did saitama could adapt to defeat him

Saitama wins he does have limitless potential but his power does rise exponentially as he fights while emotional and we can consider that in base cause sure it was genos that caused it initially but its shown all saitama wants is a good fight so its a given when a opponent shows up that can do that that his emotions would surge and the main question at hand is if goku could finish the fight before his power becomes too much to handle much like the Moro fight in dragon ball but given goku also likes to fight and let opponents get to full power before finishing them off just cause he wants to see how strong they could be. And saitama being a gag character doesn’t mean his one punch is it’s not a ability it’s just strength thus why when saitama faced Boros he was able to regenerate if not for that boros wouldn’t survive each hit saitama threw was him holding back and forcing boros to regenerate from almost nothing just to survive with saitama only using normal punches which goku is definitely durable enough to take the hits but the question becomes for how long and at which point is Goku forced to realize hes going to have to go all out
