@testkitchen: Oil has a reputation for being harsh, but at the same temperature, it’s actually gentler than water, which means more tender, flaky fish.   #testkitchen #howtocook #whitefishrecipe #oilpoaching

Watched the whole thing even though I hate fish just because the science was so interesting. What else can I poach with this method?

Actually oil feels cooler not because it has less total energy than water at the same temperature but because it has a lower thermal conductivity than water causing it to raise the temperature of your finger slower than water

That’s so cool to teach everyone to check hot oil with their finger.

140° F = 60° C / 180° F = 82° C / 250° F = 121° C. There, fixed.

That’s not why it didn’t feel as hot though. Thst has all to do with the oils heat transfer coefficient which is separate from how much heat energy it can hold

I never really thought about the thermal mass of oil being less than water, but it makes obvious sense because it's less dense.

Olive oil is a valuable source of healthy fats that must be consumed rather than just throw away after cooking your fish. Try corn oil then you can make your sauce with the olive oil.

If you're posting this on TikTok you really need to state that all your temperatures are in Fahrenheit. I know that America's Test Kitchen is an American show and that they use Fahrenheit in America, but on tiktok you have an international audience and you don't want people putting their finger into 140° Celsius oil! And yes I did notice that the thermometers said Fahrenheit, but not everyone may be as attentive.
