@mamalindacooks: 🧡 The secret is… adding Japanese pumpkin (kabocha) when making rice! Japanese pumpkin, also known as kabocha, is packed with fiber, potassium, and vitamins A & C, making it a delicious way to support digestion and a healthy immune system. With its chestnut-like flavor and naturally sweet taste, kabocha brings a cozy autumn touch to your rice, perfect for the season! Optionally, you can also add black glutinous rice for even more fiber and antioxidants, including anthocyanins, which give the rice its beautiful purple color. It’s an effortless way to make your everyday rice a little more nutritious and special. Enjoy! 🧡 Easy Pumpkin Purple Rice • 2¾ cups medium-grain white rice • ¼ cup black glutinous rice • Cold water • ½ small Japanese pumpkin (kabocha), scrubbed clean and seeds removed Steps: 1. Wash and drain the rice until the water runs clear. 2. Add cold water up to the 3-cup line, or use the normal amount of water for cooking 3 cups of white rice in your rice cooker. No extra water is needed. 3. Place the pumpkin on top of the rice. 4. Cook the rice as usual on the “white rice” setting. 5. When cooking is complete, break up the pumpkin with a rice paddle and gently mix it into the rice. Enjoy! Mama’s Tip: No need to peel the pumpkin! The skin softens as it cooks, adding extra color, fiber, and nutrients. Just make sure to scrub it clean first. #rice #kabocha #pumpkinseason #squash #ricecooker fiber
