Kabab Digi 👩🏻‍🍳  Some call it kabab digi, others kabab tabei. This is one of those regular weeknight meals in our house. I grew up with the kabab shaped into little patties, but you can form it however you want. Long, flat, round, whatever works. Just make sure your rice is already on because this comes together quickly.  Ingredients * 500g ground lamb or beef * 100g onion, grated * 3 tomatoes, halved or quartered * 2 sweet long peppers, chopped * 6 cremini mushrooms, halved * 1/2 onion, roughly chopped * 1 tsp tomato paste * 2 tbsp lemon juice * 2 tbsp water * 1/2 tsp turmeric * 1/2 tsp paprika * Salt and pepper, to taste * Olive oil, for frying and roasting * Sumac, for seasoning the veg Instructions:  1. Get your rice going
Persian rice takes time, and this dish is fast. Get it started first. 2. Grate and drain your onion
Use a spoon to press out the extra liquid. 3. Mix the meat
Add the grated onion to the ground meat along with turmeric, paprika, salt, and pepper. Mix really well for 2 to 3 minutes until the meat is fully seasoned and a little sticky. Cover and put it in the fridge while you prep the rest. 4. Toss the veg
Mix the tomatoes, peppers, mushrooms, and onion with olive oil, salt, pepper, and a big pinch of sumac. 5. Roast the veg
Spread the veggies out on a tray and roast at 400°F for 30 minutes. Stir every 10 minutes so they roast evenly. 6. Form and sear the kababs
Take the meat out of the fridge and shape it into patties or any shape you like. Sear the patties in a hot pan with oil until browned on both sides. No need to cook them all the way yet. 7. Make the glaze
Mix the tomato paste with lemon juice and water until it becomes a loose sauce. 8. Finish in the oven
In the last 5 minutes of roasting, add the patties to the tray. Spoon the tomato-lemon glaze over everything and return to the oven. Let it all finish together until the kababs are cooked through and glossy. Serve with Persian rice, sumac and your favourite torshi. I also sprinkle some extra sumac on top right before serving.
