Your phone contains a radio transmitter that can communicate with cellular networks. During flight, airlines require cellular transmissions to be disabled as part of established aviation procedures and electromagnetic-compatibility considerations. And yes-if the aircraft provides approved onboard Wi-Fi and the airline permits it, you may still be able to use Wi-Fi after activating flight mode.
