Pumpkin Cheesecake Bars with Gingersnap Crust Pan: 9×13-inch Gingersnap Crust 2 cups (237 g) finely crushed gingersnap cookies 5 tbsp (71 g) unsalted butter, melted 1 tbsp (14 g) packed light brown sugar ⅛ tsp kosher salt Pumpkin Cheesecake Filling 3 (8 oz) packages (680 g) full-fat block cream cheese, room temperature ¾ cup (150 g) granulated sugar ¼ cup (53 g) packed light brown sugar 2 tbsp (17 g) all-purpose flour 1½ tsp ground cinnamon ½ tsp ground ginger ¼ tsp ground nutmeg ¼ tsp kosher salt 1 cup (236 g) pumpkin puree ½ cup (120 g) full-fat sour cream, room temperature 2 tsp vanilla extract 3 large eggs, room temperature Stabilized Whipped Cream 1½ cups (360 mL) cold heavy whipping cream 3 tbsp (23 g) powdered sugar 1 tbsp instant vanilla pudding mix 1 tsp vanilla extract For Topping Ground cinnamon, for a light dusting Crushed gingersnap cookies Instructions 1. Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper, leaving enough overhang to lift the bars from the pan later. 2. Combine the gingersnap crumbs, melted butter, brown sugar and salt. Stir until evenly moistened. 3. Press the crumbs firmly and evenly into the bottom of the prepared pan. Bake for 8–10 minutes, until set and fragrant. Remove from the oven and let cool slightly. 4. Reduce oven temperature to 325°F (163°C). 5. Beat the cream cheese on medium-low speed until completely smooth. 6. Add the granulated sugar, brown sugar, flour, cinnamon, ginger, nutmeg and salt. Mix on low until smooth, scraping down the bowl as needed. 7. Add the pumpkin puree, sour cream and vanilla. Mix on low just until combined. 8. Add the eggs one at a time, mixing on low just until each egg is incorporated. Avoid overmixing once the eggs have been added. 9. Pour the filling over the crust and smooth the top. 10. Bake at 325°F (163°C) for approximately 40–48 minutes, beginning to check around 38–40 minutes. The edges should be set and the center should still have a gentle jiggle when the pan is moved. It should move together rather than look liquid or slosh. 11. Turn off the oven, crack the oven door and leave the cheesecake bars inside for 20 minutes. 12. Remove from the oven and cool completely at room temperature. Cover and refrigerate for at least 6 hours, preferably overnight. 13. Once completely chilled, make the whipped cream. Beat the cold heavy cream, powdered sugar, instant vanilla pudding mix and vanilla until medium-stiff peaks form. 14. Spread the whipped cream evenly over the chilled cheesecake. 15. Lightly dust the top with cinnamon or sprinkle with crushed gingersnaps. 16. Lift the cheesecake from the pan using the parchment. Cut into bars with a sharp knife, wiping the blade clean between cuts. Keep refrigerated. Note: Use pumpkin puree, not pumpkin pie filling. For the smoothest cheesecake, use full-fat block cream cheese and room-temperature filling ingredients. #pumpkincheesecakebar #pumpkincheesecakebars #pumpkinbars #pumpkincheesecake #pumpkindessert
