Marinate the chicken with fish sauce, crushed black pepper, garlic, and calamansi for at least 30 minutes. 2. After marinating, boil the chicken in water together with calamansi, garlic, onion, bay leaves, salt, and whole peppercorns. 3. Boil for around 20-25 minutes. 4. Remove the chicken and let it dry. 5. Mix soy sauce and oil, then brush the mixture all over the chicken. 6. Air-fry at 200°C for 10–12 minutes, or until the skin is golden and crispy.
