If you want a super moist, bakery-style red velvet layer cake for the holidays, this is the one to save and make. Recipe below👇🏻 Ingredients Red Velvet Cake * 2 ½ cups (340g) all-purpose flour * 2 Tbsp (12g) Dutch-process cocoa powder * 1 tsp baking soda * 1 tsp baking powder * 1 tsp kosher salt * ½ cup (113g) unsalted butter, softened * ½ cup (110ml) neutral oil (I use Avocado oil) * 2 cups (400g) granulated sugar * 3 large eggs, room temp * 1 Tbsp vanilla extract * 1 cup (240ml) buttermilk, room temp * ½ cup (120g) sour cream, room temp * 2 tsp white vinegar * 1 ½ tsp Super Red gel food coloring  * ½ cup (120ml) hot coffee Cream Cheese Frosting * 2 cups (4 sticks / 452g) unsalted butter, softened * 16 oz (452g) full-fat cream cheese, cold * 7 cups (840g) powdered sugar, sifted * 2 Tbsp vanilla extract * ½ tsp kosher salt Instructions Make the Red Velvet Cake 1. Preheat & prep * Preheat oven to 350°F (175°C). * Grease three 8-inch pans. 2. Mix dry ingredients
Whisk together flour, cocoa powder, baking soda, baking powder, and salt. Set aside. 3. Cream butter, oil & sugar
Beat butter, oil, and sugar for 2–3 minutes until pale and fluffy.  4. Add eggs + flavorings
Whisk (or lightly emulsify) the eggs in a separate bowl first (this helps them incorporate smoothly and prevents overmixing). Add the whisked eggs to the batter one at a time, mixing just until combined. Then mix in the vanilla and vinegar. 5. Add the red coloring
Mix in 1½ tsp Super Red until the batter is deep ruby red. 6. Add dry ingredients and buttermilk
With mixer on low: * Add half the dry ingredients * Add all the buttermilk * Add remaining dry
Mix just until combined. 7. Mix in sour cream
Fold or mix gently to keep the crumb tender. 8. Add the hot coffee
Pour in the hot coffee and mix on low until the batter is smooth and silky. 9. Bake
Bake for 26–32 minutes or until cakes spring back when gently touched.
Cool completely before frosting. Make the Cream Cheese Frosting 1. Whip the Butter
Beat the butter alone on medium-high for 3–5 minutes until very pale, thick, and fluffy. 2. Add Cold Cream Cheese
Cut cream cheese into cubes. Add a few at a time on medium-low until smooth.
Don’t overbeat, we don’t want it to turn slimy.  3. Add Vanilla & Salt
Mix until combined. 4. Add Powdered Sugar
Add powdered sugar one cup at a time on low.
Scrape the bowl, then whip for 1–2 minutes on medium-high until fluffy and cloud-like.
Stop as soon as it’s whipped.  Assemble the Cake 1. Trim the domes
Once the layers are fully cooled, level the tops with a serrated knife so the cake stacks evenly. 2. Prep your cake board
Pipe or spread a small amount of cream cheese frosting in the center of the board, this acts as glue and keeps the cake from sliding. 3. Stack the layers
Place the first layer on the board, add an even layer of frosting, and repeat with the remaining layers. 4. Crumb coat
Apply a thin layer of frosting around the entire cake to seal in crumbs. Chill for 20–30 minutes until set. 5. Final coat & decorate
Add your final layer of frosting and smooth or decorate however you’d like. 6. Storage
