@summers_homemade_meals: Yousef’s Birthday Dinner ❤️🥹 Today we celebrated my little big man with the best of the best! 🎉 Rib steak from Saad Wholesale, mashed potatoes, Power Girl salad, and roasted vegetables. And listen… I’m a working mom. I need ALL the help I can get. 😂 We cut corners over here — we all do! Because cutting corners is better than having NO corners at all. 🥴😂 ❤️ OVEN-ROASTED RIB STEAK Ingredients: • Rib steak/roast • Dijon mustard • Salt + pepper • McCormick seasoning • Carrots • Onions • Celery • Bay leaves • Water or broth 🔥 Grill first to get those beautiful char marks. Rub with Dijon, seasonings, add your vegetables, bay leaves and a little water/broth. Cover and bake at 325–350°F for about 4 hours, depending on the size and tenderness of your meat. You can also use lamb with this method! 🥔 GARLIC MASHED POTATOES Ingredients: • Golden potatoes • Lots of butter 🧈 • Heavy cream • Cream cheese • Garlic cloves • Salt Boil potatoes until almost fork-tender. Turn off the heat, add garlic, cover and let them steam for 10–15 minutes. Drain, then mash with butter, cream, cream cheese and salt. DON’T overcook your potatoes! 🥕 ROASTED VEGETABLES Ingredients: • Your favorite vegetables • Olive oil • Salt + pepper • Your favorite seasoning Roast at 425°F until tender and caramelized. And yes… we ate, celebrated, laughed and LOVE HARD in this family. ❤️ According to my kids, Yousef is the favorite. 😂 He’s truly the diamond in the rough. 🥴 The first time I got a call from his first-grade teacher, I thought she was joking.
