BATTER & FRYING * 4 large eggs * 1 tbsp tomato paste * 2 tsp paprika * ½ tsp salt * ½ tsp black pepper * 2 cups cornstarch or all-purpose flour * 1 cup neutral oil for frying (avocado or canola) TOMATO SAUCE 🍅 * 3 tbsp olive oil * 1 onion, finely chopped * 4 celery ribs, finely chopped * 2 carrots, finely chopped * 1 tbsp paprika * 2 tsp salt * 1 tsp black pepper * 1 tsp cumin * ½ cup tomato paste * 4 cups water INSTRUCTIONS 👇 1. Prepare the filling: Combine all meat filling ingredients in a large bowl. Mix well. 2. Prepare the mafroom: Slice potatoes lengthwise into ¼-inch slices. Sandwich an even layer of meat between two matching potato slices, pressing gently to hold them together. Repeat with remaining potatoes and filling. 3. Coat: Whisk eggs, tomato paste, and spices. Dip each mafroom into the egg mixture, then coat completely in cornstarch. Use one hand for wet and one for dry! 4. Fry: Heat oil in a large skillet.
