تعليم الخَبز من الصفر سر النتيجة الخرافية والمسامات الواسعة من جوة يعتمد على التفاصيل الصغيرة والتخمير البطيء! إليكم المقادير والخطوات بالتفصيل: المكونات والمقادير ‏⚬ عجينة التخمير المسبق (البيجا - Biga): ‏⚬ 400 غرام دقيق عالي البروتين ‏⚬ 200 مل ماء ‏⚬ 4 غرام خميرة ‏⚬ العجينة الأساسية: ‏⚬ كامل كمية البيجا المُجهزة مسبقاً ‏⚬ 600 غرام دقيق ‏⚬ 550 مل ماء (للوصول لنسبة ترطيب 75% مع البيجا) ⚬ ٢ جرام خميرة إضافية ⚬ 35 غرام ملح ‏⚬ القليل من الماء الإضافي لتذويب الملح ‏⚬ القليل من زيت الزيتون (لليد والوعاء) طريقة التحضير اليوم الأول: تحضير البيجا 1. تُخلط مقادير البيجا (400 غرام دقيق، 200 مل ماء، 4 غرام خميرة) بلطف حتى تتجانس فقط من دون عجن مفرط. 2. توضع في وعاء محكم، وتُترك لتتخمر في الثلاجة لمدة 18 ساعة. اليوم الثاني: العجن والتخمير الأساسي 1. الأوتوليز (Autolyse): يُخلط الدقيق (600 غرام) مع الماء (550 مل)، ويُترك ليرتاح لمدة 20 دقيقة لتفكيك النشا وتسهيل بناء الجلوتين. 2. تُضاف البيجا المُخمرة ورشة الخميرة الإضافية إلى الخليط، ويبدأ العجن لبناء شبكة الجلوتين. 3. بمجرد أن تبدأ العجينة بالنعومة، يُضاف الملح مع القليل من الماء حتى يذوب، مع الانتباه ألا تتعدى حرارة العجينة 27 درجة مئوية. 4. تُدهن اليد بزيت الزيتون وتُنقل العجينة لوعاء مدهون. 5. التطبيقات (Stretch & Fold): تُطبق العجينة 3 تطبيقات كل نصف ساعة (3 مرات إجمالاً) لتقوية قوامها. 6. تُترك العجينة لترتاح وتتخمر تماماً حتى يتضاعف حجمها إلى 3 أضعاف. 7. تُقلب العجينة بلطف على سطح مرشوش بالدقيق للحفاظ على الغازات، وتُقسم إلى رغيفين متساويين (حوالي 900 غرام للرغيف). 8. يُلف الرغيف ويُحكم إغلاق الأطراف جيداً لحبس الغازات، ثم يوضع في سلة التخمير ووجهه الناعم للأسفل. 9. تُغطى السلة وتدخل الثلاجة للتخمير البطيء لليوم التالي. اليوم الثالث: الخبز 1. يُحمّى الفرن مسبقاً من الأعلى والأسفل على حرارة 245° مئوية مع وضع قدر الحديد (Dutch Oven) بداخله لمدة 30 دقيقة على الأقل. 2. يُقلب الرغيف على ورق زبدة، ويُعمل شق طولي واضح ومناسب بالموس على الجانب لمساعدة الرغيف على التمدد والانتفاخ. 3. يوضع الرغيف داخل القدر الساخن ويُغطى، ثم يُخبز لمدة 25 دقيقة. 4. يُرفع الغطاء، ويُعاد الخبز لمدة 20 دقيقة إضافية حتى يكتسب لوناً ذهبياً غامقاً وقشرة مقرمشة. 5. يُترك الخبز ليبرد تماماً على شبك قبل التقطيع.
