@realfarmerjeff: To clarify, I was experimenting with freeze drying breast milk and not creating my own homemade infant formula from a recipe which can be dangerous. I just didn’t want to potentially waste a lot of breast milk if it didn’t turn out so I diluted whole milk with water to approximate the texture of breast milk. We of course didn’t feed this to our baby 😊 I still think freeze drying breast milk is a cool idea for a few reasons 1. It can significantly extend the shelf life of breast milk and make traveling with it much easier. 2. Removing the water makes it much more compact and lightweight. 3. When properly rehydrated, you’re still working with breast milk, not trying to create your own infant formula. One helpful tip: freeze-dry the milk in rectangular molds so you know exactly how much milk was originally in each piece. That makes it much easier to determine how much water to add back when you’re ready to rehydrate it.

Freeze drying human breast milk and then adding water to use it has been studied for many years. Researchers have looked at whether it could be used for premature infants and whether it can help preserve or concentrate parts of human milk. A 2024 review summarized 48 studies, but the studies used different methods and measured different outcomes. As a result, the evidence does not show that freeze-dried milk is the same as fresh milk or milk stored by standard methods in every way. Research has shown that freeze drying can change some features of human milk. For example, it may change the size of fat droplets and reduce levels of certain enzymes, vitamin C, and immune proteins called immunoglobulins. The size and importance of these changes may depend on how the milk is processed and stored. Some findings are less certain. One study of premature infants reported abnormal electrolyte levels after they received freeze-dried human milk. However, this was a single study in a specific group of infants, so it does not prove that freeze-dried milk generally causes this problem. In contrast, another 2024 study found that the main nutritional components of freeze-dried donor milk stayed fairly stable after 12 months of storage. This suggests that some components may be preserved well, but it does not mean that all nutrients, enzymes, or immune factors remain unchanged.
