hear me out: roast a few of the zucchini slices separately with a garlic clove, and throw em in the blender with the heavy cream, use that instead of plain heavy cream it gives lovely earthy notes

I love sautéing the zucchini in garlic oil and then add the parm and pasta water to it, makes it creamy without the cream. Best pasta dish ever.

I had a pasta dish in sienna with zucchini, and prawns. The zucchini water and pasta water formed a sauce and it was incredible. I think there was cheese in there too for emulsification, but am not sure as they don’t tend to like seafood and cheese. Delicious nonetheless.
