Hi, quick question: What does the tagatose bring to the syrup in this case? Does it help with the thickness or texture? I’m wondering what the benefit of using a 50/50 blend is compared with using 100% allulose or 100% tagatose.

type 1 diabetics: please know that heavy cream DOES have carbs in it, even if it is a small amount. if your blood sugar will go up from very little carbs- like 1g, then you need to be conscious that this very possibly could affect you. sincerely, a type 1 diabetic who couldnt understand why my sugar was going up from a quarter cup of heavy cream in my black coffee, then 3 or 4 coffees a morning... the packaging is allowed to say "0" or "less than 1" because the serving size for heavy cream is 2table spoons and there is less than .5 grams in that, but when you use multiple table spoons, it turns out to be enough to raise your blood. its a great recipe! I just done want someone to have the headache i went through!

I literally never thought I could make sf caramel sauce. Now I wanna make this. I wish there was a similar consistency to peanut butter sauce. Every one I’ve found is not good. I mean they are nice but not like a coffee drizzle consistency I’m looking for. One day maybe.

I bought allulose once and it had a bitter aftertaste, is that how it tastes to everyone? Splenda taste bitter to me too.

Thankyou so much for showing this! I'm a type one diabetic and I love caramel vanilla coffees in the morning (literally making one as I watch this), so looking forward to trying this and replacing my coffee mate. I drink milk all the time, I just dose insulin for it, but dosing for things like caramel regularly can get things out of wack. this looks amazing! Going to try it with my ninja creami icecream too. Would you make any adjustments for using it with icecream?
