There’s no such thing as a bad cut of beef just because it takes longer to cook. Beef is muscle, & the more that muscle is used, the stronger it becomes & the longer it needs to cook to become tender. That’s why steak cuts are usually cooked quickly & not pushed too far. If you overcook them, they can become dry, tough, & rubbery. Let’s talk about the most three famous cuts of steak. Tenderloin: This is probably the most tender cut because it comes from a muscle that barely gets used. It has very little marbling, so the flavour is milder, but the texture is extremely tender. Medium rare is the way to go. Sirloin: This one has a little more fat & a stronger beefy flavour. It’s slightly firmer, so it works really well when marinated. Medium is the way to go. Rib-eye: My personal favourite. It comes from the rib section, so it has more marbling, more fat, & more meaty flavour. It can also handle a little more cooking than the other two. Up to medium well. (gives fat more time to render) And then you have the cap, which is the fatty part around the outside of the eye. For me, this is one of the best parts of the whole steak, so I like separating it & treating it like its own cut. Because rib-eye has more fat, I like serving it with chimichurri. It’s fresh, acidic, & cuts through the richness of rib-eye really well. Chimichurri: Finely chop the garlic and fresh herbs, then mix them with lemon juice, vinegar, olive oil, salt, pepper, oregano, chili oil, & Dijon mustard.
