As an fyi, whilst it’s no longer a common food in the uk, it can be found in old fashioned pie shops in places like east London. I hate to tell you but you’ve made it very wrong and what you’re eating is not jellied eels. The jelly is naturally produced from the eel, it’s not encased in gelatine.

Some context on why these were (and in some cases are still eaten in London) during WW1 and 2, with food scarce, eels were caught in the river Thames and this is how they were prepared to give them a longer shelf life. Nobody really eats them anymore but you can find them in pie and mash shops in London. They’re not popular and they’re hard to find. But some older generations still enjoy them.
