@hannahsykesburch: perfect cozy meal this weekend & and it all comes together in one pot! 🍂🧺 gluten-free lasagna soup: heat 1 tablespoon olive oil in a large pot over medium-high heat. add 1 lb ground beef and cook for 4-5 minutes, until browned. add 1 medium chopped sweet onion. cook for 2-3 minutes, until softened. add 3 minced garlic cloves, 2 teaspoons Italian seasoning, and ¼ teaspoon crushed red pepper flakes. cook for 1 minute. stir in 3 tablespoons tomato paste, then add 1 (28 oz) can crushed tomatoes, 6 cups of chicken broth, ⅓ cup fresh basil leaves, and 1 parmesan rind (optional, but adds great flavor). bring to a boil, then reduce the heat and simmer. stir in 8 oz gluten free lasagna, broken into pieces, and cook for 12-15 minutes, or until tender. in a separate bowl, mix together 1 cup ricotta, ½ cup grated parmesan, ½ teaspoon salt, and ¼ teaspoon black pepper. remove the parmesan rind from the soup after pasta is cooked. stir in ¼ cup heavy cream and 1 cup shredded mozzarella until melted. ladle into bowls and top with the ricotta mixture. enjoy! #EasyRecipe #lasagnasoup#EasyRecipees #mealideas #fallrecipes
