@elenaandorion: What connects skin cancer, cholesterol, corn, and a disease that made people’s skin peel? Vitamin B3, also called niacin. Indigenous people in Mesoamerica cooked dried corn with lime or wood ash. This process, called nixtamalization, makes the niacin in corn easier for the body to use. Europeans brought corn home, but did not adopt that cooking method. For poor families eating mostly untreated corn, severe B3 deficiency could lead to pellagra: painful skin damage, diarrhea, confusion, and sometimes death. In Italy alone, more than 26,000 people died from pellagra over one ten-year period. B3 also helps your body make NAD and NADP—the tiny “delivery trucks” that carry electrons inside your cells. And the modern research gets stranger: niacinamide reduced new common skin cancers by 23% in a study of people who had already had skin cancer. High-dose niacin improved cholesterol numbers, but did not reduce cardiovascular events when added to statins. Same vitamin family. Different forms. Very different results. Chicken, turkey, tuna, and salmon are strong sources. Peanuts, lentils, brown rice, and mushrooms add some too. And many cereals are fortified. Tryptophan-rich foods, like eggs and dairy, can help your body make a bit of niacin too.
