My great grandma made these. She was born in the late 1800s. My grandma hung hers on her enclosed back porch when I was a child. It definitely works. They used to dry out onions too and hang them in the leg of an old pair of pantyhose.

Interesting!!! So they don’t mold or spoil where they were pierced?

If you don’t have a bead, use a button or a double knotted strip of cotton fabric as the anchor.

My neighbor when I was a child taught me how to do leather britches. She was from Beckley,WV & was a wealth of inspiration to me as a younger teen. Good eating!

❌So I thought about it❌ :
My family is from Harlan County Harlan, Kentucky. We called them shuck beans or shucky beans. We would string them up like that or just lay them in a pillowcase with hot peppers and lay them in the sun and let them dry out that way the bugs wouldn’t bother them and the peppers never messed with the taste. They were so good .

How do you preserve things like cabbage or squash/zucchini? I’ve never found frozen squash/zucchini to have a decent texture. It’s always mush

My great grandmother would hang them in her attack to dry in WVa. And I’m 65 😊

And once in the bag they don’t need to be refrigerated or put in the freezer? I’m assuming not. ?? Interesting. I still have some green beans. I’ll have to try it.

These are so good! And I love how there's no canning required. They're really good with greasy grits green beans

Pro tip: a loosely woven mesh or cheesecloth sack around the leather britches keeps the nasty dust/grease in the air from settling on your beans. Do NOT tightly encase them! Just think of it as a veil draped very loosely.

Unfortunately we have inside critters that would see a brand new toy hanging in the window just for them! 🤣 I’d love to try this, though! We do use an electric dehydrator for other things.

I have never had luck making leather britches. I’m glad you use that term. My mom and her family always called them that. When I use the term people look at me like I am weird.

Wait I want to do this for my parrot since know this would make a fun foraging food meal for him. Why have I never thought to do this?! Off to the craft room and then fridge.
