Ingredients * 300g young ginger * 1 tsp salt * 200ml white vinegar * 100g white sugar * 50ml water * A few thin red chilli slices (optional) Method 1. Wash and gently peel the young ginger, then slice it thinly. 2. Add 1 tsp salt, mix well and leave for 20 minutes. 3. Gently squeeze out the liquid released from the ginger. Do not rinse. 4. In a small saucepan, combine 200ml white vinegar + 100g white sugar + 50ml water. 5. Heat gently while stirring until the sugar has completely dissolved. No need to boil. 6. Turn off the heat and let the vinegar-sugar mixture cool completely to room temperature. 7. Place the squeezed ginger slices into a clean, dry glass jar. 8. Pour the completely cooled vinegar-sugar mixture over the ginger until all the slices are submerged. Add a few red chilli slices if desired. 9. Close the jar and refrigerate for 1–2 days before eating. Keep refrigerated and use a clean, dry utensil each time you take some out.
