@afro.kills: Italy has strict standards for what can be sold as traditional dried pasta. Under Italian law, it’s generally made with just two basic ingredients: durum wheat semolina and water. Added ingredients and certain processing aids aren’t permitted under the standard, and the presence of common soft wheat is tightly limited. That’s a much narrower standard than what applies to many pastas sold in U.S. supermarkets, where enrichment and additional ingredients are common.
