@rebekah.randell: Baking dates are my favourite. A true Kiwi classic, Weetbix Slice. INGREDIENTS 185g butter 1 cup sugar 2 tbsp cocoa 3 Weetbix (50g), crushed 1 cup plain flour 1 cup coconut 1 tsp baking powder ICING 2 cups icing sugar 3 tbsp cocoa 50g softened butter 2–3 tbsp boiling water METHOD Melt butter, sugar and cocoa in a saucepan over low heat. Remove from heat and stir through Weetbix, flour, coconut and baking powder. Press into a lined slice tin and bake at 180°C fan bake for 15–20 mins, it should still feel soft in the centre. Mix icing ingredients until smooth, adding boiling water as needed. Ice while the slice is warm, then cool completely before slicing.
