Don’t get me wrong, I love a quintessentially British, slightly-too-charred sausage – but sometimes you’ve gotta get creative on the barbecue 🎨🍗 We have been non-stop barbecuing this summer with all this sunshine, and here are some of my favourite plates. 1. Pork chop with Cambodian-inspired green sauce, inspired by Barang – this is SO fragrant, with coconut, green peppercorns and fish sauce. 2. Thai red curry skewers – oh so simple, but oh so delicious – just red Thai curry paste and coconut cream marinated chicken thighs. 3. Charred gem lettuce with ranch and crispy bacon – if you didn’t think you could cook a lettuce, think again. This is heavenly with the crispy lil bacon bits and creamy sauce. 4. Pork belly skewers with gochujang and honey – sticky, sweet, spicy. 5. Okay okay, I know I said no sausages… but I’ve snuck a very special one in here. Push the boat out and get a sexy one from the farm shop or a better quality supermarket one, and garnish it all nicely with some herbs. 6. Not on the grill, but my favourite bbq side this year – simply add roasted sweet potato into a potato salad. The soft, mashed potato makes it so creamy and sweet – salivating thinking about it again.
