Recipe: 🔥🇯🇲 Jamaican Jerk Chicken  10 lb chicken quarters (about 12) Ingredients: * 1 1/2 cup homemade jerk marinade * 3/4 cup green seasoning * 3 tbsp dry jerk seasoning * 1 tbsp salt (adjust to taste) * 2 tsp black pepper * 2 Tbsp of brown sugar * 3 tbsp olive oil * Red Stripe beer, for basting To clean:  -2–3 limes -1/2 cup vinegar & salt Directions: Clean chicken with lime, vinegar & salt, rinse with cold water and pat dry. Sanitize your sink and work area and wash your hands afterward. - in a bowl add  jerk marinade, green seasoning, dry jerk seasoning, salt, black pepper, brown sugar & olive oil. Mix it all together. Before adding it to the raw chicken, use the two-spoon method to taste and adjust the seasoning to your liking. Pour mixture over the clean chicken and rub seasoning under the skin and all over the chicken. Marinate 2–4 hours or overnight for best flavor. -Heat charcoal grill to 350–375 degrees F using two-zone heat. Grill mostly over indirect heat for 30–40 minutes, turning and lightly basting with Red Stripe. Finish directly over the coals for 10–15 minutes until nicely charred and cooked through. Rest 5–10 minutes. -Jerk Butter Sauce * 4 tbsp butter * 1/3 cup fresh jerk marinade * 1/3 cup chicken broth * 1 tbsp ketchup * 1 tbsp brown sugar * 1 tsp Worcestershire * 1 tsp lime juice * Salt to taste  Melt butter, add remaining ingredients and simmer 5–7 minutes until slightly reduced.
