@janellynell4: One of my favorites! #mexicanfood #casserole #lasagna #tacos #EasyRecipe Cheesy Mexican Lasagna This is a crowd-pleasing, layered casserole that combines all the flavors of a taco into a comforting lasagna format, using flour tortillas instead of pasta sheets. You Will Need: For the Meat Filling (started from your list): * 2 tsp minced garlic * ¼ cup (about 2 packets) taco seasoning * ½ cup water * 1 lb lean ground beef * 1 large onion, finely diced * 1 can (15 oz) black beans, drained and rinsed * 1 cup corn kernels (frozen or canned) For the Layers and Assembly: * 12 large (burrito-sized) flour tortillas * 1 jar (24 oz) taco sauce or your favorite salsa (for the sauce layer) * 2 cups refried beans * 4 cups shredded Mexican blend cheese (or a mix of cheddar and Monterey Jack) For Serving and Garnishing (as seen in the photo): * Sour cream (or Mexican crema) * Diced tomatoes * Sliced green onions (scallions) * (Optional) Diced avocado, cilantro, or a drizzle of hot sauce Instructions: Step 1: Prep and Preheat Preheat your oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish with cooking spray. Set aside. Step 2: Make the Meat Filling * In a large skillet over medium-high heat, cook the ground beef and diced onion until the beef is browned, breaking it up with a spoon as it cooks. Drain any excess fat. * Add the minced garlic and cook for 1 more minute until fragrant. * Stir in the taco seasoning and the ½ cup water. Reduce heat to low and simmer for 5 minutes, or until the liquid has thickened and coated the meat. * Remove from heat and fold in the drained black beans and corn. Step 3: Assemble the Lasagna This creates three delicious layers. To assemble: * Bottom Layer: Spread a thin layer of the taco sauce/salsa onto the bottom of the prepared baking dish. Top with 3-4 tortillas (cut to fit as needed to cover the bottom). Over the tortillas, spread half of the refried beans, then half of the meat mixture, and finally 1½ cups of the shredded cheese. * Middle Layer: Top the cheese with another layer of 3-4 tortillas. Over this, spread the remaining half of the refried beans, the remaining meat mixture, and another 1½ cups of the cheese. * Top Layer: Finish with a final layer of 3-4 tortillas. Pour the remaining taco sauce/salsa evenly over the tortillas and top with the remaining 1 cup of shredded cheese. Step 4: Bake Cover the baking dish tightly with aluminum foil (this prevents the tortillas on top from drying out before the filling gets bubbly). Bake for 25 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is bubbly and starting to turn golden brown. Step 5: Garnish and Serve Let the lasagna rest for 10-15 minutes before slicing; this helps it hold its shape. Cut into squares and serve. Top each square with a generous dollop of sour cream, diced tomatoes, and green onions, just like in the picture!
