Do yourself a favor and save this delicious vodka pasta recipe 😮‍💨👨🏾‍🍳 Thank me later 😉 FULL RECIPE ⬇️ Finely mince ½ of a shallot and 4–5 garlic cloves, then finely chop a handful of fresh parsley and set it aside for garnish. Fill a large pot with water, lightly drizzle in some olive oil, and add a generous amount of salt. Bring the water to a boil over medium heat. Add 12 ounces of your pasta noodles of choice and cook according to the package instructions until al dente. Before draining, reserve ⅓ cup of the pasta water and set it aside. Drain the pasta and set it aside. Meanwhile, heat a large pan or skillet over medium heat and lightly drizzle in some olive oil. Add the minced shallot and sauté for about 2 minutes, until softened. Add the minced garlic and cook for another 1–2 minutes, stirring frequently, until fragrant. Stir in 6 ounces of tomato paste and season with salt, black pepper, Italian seasoning, and crushed red pepper flakes. Cook for about 1 minute, stirring continuously, to deepen the flavor of the tomato paste. Pour in 1½ ounces of vodka and stir well to combine. Let the mixture simmer for 1–2 minutes, allowing the alcohol to cook off. Add 2 cups of heavy whipping cream and stir until the sauce is smooth and fully combined. Gradually add 1 cup of freshly grated Parmesan cheese while stirring, then pour in the reserved pasta water. Continue stirring until the sauce is creamy and cohesive. Taste the sauce and adjust the seasoning if needed. Add the cooked pasta to the sauce and toss until it is fully coated and evenly combined.
