@fonniesdiaries: Making Ekpang Nkukwo today — one of the traditional dishes associated with the Efik and Ibibio people of Nigeria. 🇳🇬 Ekpang Nkukwo is made with grated cocoyam, which is wrapped in leaves and cooked slowly in a rich palm-oil-based broth with ingredients like crayfish, fish and meat. The wrapping may look like a lot of work 😂, but there's actually a reason for the technique: the little grated-yam portions cook in the broth and absorb all those flavours.
