@calcookz: Would you try this Ghanaian creation of mine👀🇬🇭 Now this has to be my favourite African style dessert that I’ve made so far. I kept on buying Nkate from my local African store and it really inspired me to turn it into something else. The contrast of textures really did it for me on this dish. The crunchiness, silkiness and biscuity textures really did it for me. **Here’s the ingredients:** 300g digestive biscuits 3 tbsp peanuts 1/4 cup melted butter 500g cream cheese 300g icing sugar 500ml double cream 4 tbsp peanut butter **For the Nkate:** 300g caster sugar 4 tbsp butter (optional) 300g peanuts 1. Make the biscuit base with the peanuts, biscuits and butter. Then line into the tin and allow to set for 30 minutes 2. Whisk the cream cheese and icing sugar until lightly whipped and smooth 3. Whisk the double cream separately and incorporate both mixtures together with the peanut butter 4. Set in the tin for a few hours before adding in the peanut caramel 5. For the Nkate: melt the sugar until deeply caramelised, mix in the butter and peanut. Flatten and allow to set in a tray #AfricanFood#cheesecake#ghanaianfood#ghanatiktok🇬🇭 #nkate
