If you don’t have a thermometer, look for the bubbles to become smaller, thicker and foamy, and for the syrup to look noticeably thicker. Remove from the heat and let it cool undisturbed to about 100°F. Then, using a whisk or hand mixer, mix until it becomes lighter in color and goes from thick and syrupy to smooth and spreadable.
