Years ago, Kenny and I took one of our trips to Natchez, Mississippi, while there, we ate at a little place called the Carriage House at one of those beautiful old antebellum homes. I don’t even remember the name of the house anymore, but y’all, I remember the FOOD. 😂 They had the best little silver dollar biscuits you ever put in your mouth with homemade jams and fresh butter, but then that man brought out something he called PORK CANDY. Well. That was all she wrote. 😂🥓 We loved it so much that when we got home, I had to figure out how to make it myself. And come to find out, it’s about as easy as anything you’ll ever make. 🥓 SWEET & SPICY PORK CANDY • 1 lb bacon, regular or thick-cut • About 1 cup brown sugar • Black pepper, to taste • Cayenne pepper, to taste • Red pepper flakes, to taste • A little smoked paprika Mix the brown sugar and seasonings together really well. Lay your bacon on a parchment-lined baking sheet, or even better, on a rack over a foil-lined pan so all that grease can drip underneath. Cover that bacon GOOD with your brown sugar mixture and bake at 375°F. Regular-cut bacon: about 25–30 minutes Thick-cut bacon: about 30–35 minutes Take it out and LET IT COOL. That’s when all that sugary goodness sets up and the bacon gets crispy. It’s sweet. It’s salty. It’s spicy. It’s sticky. And there is absolutely no dignified way to stand over the pan eating six pieces of it, so don’t even try. 😂 Call it candied bacon if you want. Around here, we’re calling it PORK CANDY.
