Still crying from cutting an obscene amount of onions 😭 French Onion Soup Dip: • 2 tbsp oil • 3 tbsp salted butter • 4 white onions, sliced • 1 tbsp fresh thyme, chopped • 500ml beef stock • 1 cup Gruyère • 1 cup mozzarella • 1 whole garlic bulb • 2 bone marrow bones • Chives, to garnish Steak Au Poivre Grilled Cheese: • 2 fillet steaks • 1 tbsp fresh peppercorns, crushed • Salt • 1 tbsp butter • Garlic + thyme, for basting • 2 thick slices sourdough • Gruyère • 2 slices Gouda • Handful of mozzarella Frites: • 2 large potatoes • Vegetable oil, for frying • Salt • Chives Garlic Herb Butter: • Handful coriander, chopped • 1 tbsp butter • 1 garlic clove • 1 tsp salt Method     1    Lightly oil and season the bone marrow. Wrap the garlic bulb in foil and roast both at 200°C / 400°F for 30 mins until golden and soft.     2    Add oil and butter to a pan, followed by the sliced onions. Cook on medium-high for a few minutes until softened, then reduce to low and caramelise for 1–1½ hours until deep golden brown.     3    Add the roasted garlic and bone marrow, pour in the beef stock and simmer for 30–40 mins, reducing until rich and glossy.     4    Julienne the potatoes into thin fries and soak in cold water until the water runs clear. Dry thoroughly, then fry in vegetable oil until golden and crispy. Season with salt.     5    Transfer the onion soup to an oven-safe dish, top with Gruyère and mozzarella and bake until melted and bubbling. Finish with chives.     6    Crush the peppercorns and heavily season the steaks with pepper and salt.     7    Sear in a screaming-hot cast-iron pan for 2 mins, flip, then add butter, garlic and thyme. Baste for 30 secs and continue cooking until the centre reaches around 52°C. Rest for 4 mins before slicing.     8    Load the sourdough with Gruyère, Gouda and mozzarella. Butter the outside and fry until deeply golden and melted.     9    Microwave the garlic herb butter ingredients for around 15 secs, mix and brush over the toastie.     10    Add the sliced steak, crispy frites and chives. #french #frenchonionsoup #steak #comfort #Recipe
