Laugenbrötchen ganz einfach zu Hause backen✨🥨 (English recipe below) Zutaten für 8 Stück: - 500g Weizenmehl 550er/Dinkelmehl 630er - 6g Frischhefe/2g Trockenhefe - 300g Wasser - 10g Salz - 20g weiche Butter/Margarine - optional: 2 TL Zucker Zum Belaugen: - 1 Liter kaltes Wasser - 40g Natronlauge (4%) oder alternativ Backnatronlösung* - grobes Salz Zubereitung: 1. Alle Zutaten für ca. 10 Minuten verkneten 2. Teig abgedeckt 30 Minuten bei Raumtemperatur gehen lassen 3. Über Nacht in den Kühlschrank stellen 4. Am nächsten Tag den Teig In 8 gleich große Stücke teilen und zu runden Brötchen formen. 5. Die Teiglinge ohne sie abzudecken 30–60 Minuten ruhen lassen. 6. Knead all ingredients together for about 10 minutes. 2. Cover the dough and let it rest at room temperature for 30 minutes. 3. Place the dough in the refrigerator overnight. 4. The next day, divide the dough into 8 equal pieces and shape them into round rolls. 5. Leave the rolls uncovered for 30–60 minutes. 6. Then cover the rolls and let them rest for another 15–30 minutes. This allows the surface to dry slightly and form a stable skin. 7. Lye the rolls: Carefully add the lye solution to the water (never the other way around!). Dip each roll into the lye for about 5 seconds, sprinkle with coarse salt, and score the rolls. 8. Bake in a preheated oven at 220°C / 430°F, conventional top and bottom heat, for about 15 minutes, until crisp and golden brown.
