How to wet brine a chicken Wet brining makes the most perfect, deliciously juicy roast chicken. 100g of salt 2-3 tablespoons of sugar 500mls water (for the initial simmer) Rosemary Lemon Garlic Thyme Bay Parsley Peppercorns 1.5 litres icy water 1 good quality chicken Simmer the 500mls water, sugar, salt and aromatics until dissolved Add to a large bowl Add 1500mls icy water Spatchcock chicken Submerge into water in either a sealed container or pop a plate on top Into fridge for a minimum of 8 hours up to about 24hrs Drain and pat dry Leave in fridge uncovered for a few hours Take it out and brush over a couple of teaspoons of cider vinegar (optional) Leave out for 30 minutes or a little longer to come up to room temperature Add a little oil Into pre heated oven 190c (times will vary) Take it out when the thickest part is 73c Take it out and rest on a different plate or board For around 15-20minutes-i sometimes really loosely cover with foil or I don’t cover it at all to try and keep the skin crispy It’s worth it I swear! #wetbrine #roastchicken #spatchcock #chicken #brine @Ocado @Maldon Salt
