HEALTHY LAYERED APPLE CAKE One of the EASIEST and healthy cakes you can prep, literally loads of sliced apples baked in a batter until golden. The key is letting it slowly cook then cool down with a weight on top to get those perfect layers. Have a slice for breakfast or just as a sweet treat.  Serves 6 180 kcal & 6g protein per serving Ingredients 3 medium eggs 160ml whole milk 1 tsp vanilla extract 70g plain flour 3 tbsp maple syrup 1 tsp ground cinnamon 1 tsp baking powder Pinch of salt 4 Pink Lady apples 2 tbsp rolled oats, for sprinkling Method Preheat the oven to 160°C fan and line a 2-litre loaf tin with baking paper or a loaf liner.  Whisk together the eggs, milk, vanilla, flour, maple syrup, cinnamon, oats and salt until smooth. Core and very thinly slice the apples using a mandolin or slicer. They need to be thin for this to work so take your time if using a knife!  Whisk the baking powder into the batter, then fold through the apples until well coated. Pack the mixture firmly into the tin, pressing down as you go. Pour over any remaining batter.  Bake for around 50-60 minutes until golden and set but the apples are cooked, pressing the top down once or twice during baking to keep the layers compact.  Cool slightly, cover the top with baking paper and weigh it down with something heavy. Chill in the fridge for 2–3 hours, or ideally overnight. Lift from the tin and slice. Store in the fridge for up to 5 days. To serve, warm in a pan until lightly caramelised on both sides and serve with yoghurt, maple and berries.  #healthyrecipes #mealprep
