🌶️🍤 Cajun Shrimp & Andouille Stuffed Peppers INGREDIENTS For the Peppers: • 4 large bell peppers (red, yellow, or orange) • 1 tbsp olive oil • Salt and black pepper For the Cajun Filling: • ¾ lb large shrimp, peeled, deveined, and chopped into large pieces • 8 oz andouille sausage, sliced into small pieces • 2 cups cooked long-grain white rice • 1 tbsp olive oil • 1 small yellow onion, diced • 2 celery stalks, finely diced • 3 garlic cloves, minced • 1 cup diced tomatoes, drained • 1½ tsp Cajun seasoning • ½ tsp smoked paprika • ½ tsp dried thyme • ½ tsp garlic powder • ¼ tsp cayenne pepper, optional • ½ cup chicken broth • 1 tbsp Worcestershire sauce • 1 tbsp butter • Salt and black pepper to taste For the Topping: • 1½ cups shredded pepper jack cheese • ½ cup shredded sharp cheddar • 2 green onions, sliced • Fresh parsley • Lemon wedges INSTRUCTIONS 1. Preheat the oven to 400°F (200°C). 2. Slice each bell pepper in half lengthwise and remove the seeds and membranes. 3. Arrange the pepper halves cut-side up in a large baking dish. 4. Lightly brush them with olive oil and season with salt and black pepper. 5. Bake the empty peppers for 12 minutes to begin softening them. 6. Meanwhile, heat 1 tablespoon olive oil in a large skillet over medium-high heat. 7. Add the andouille sausage and cook for 3–4 minutes until browned around the edges. 8. Add the onion and celery and cook for another 3 minutes. 9. Stir in the garlic and cook for 30 seconds. 10. Add the shrimp, Cajun seasoning, smoked paprika, thyme, garlic powder, and cayenne. 11. Cook the shrimp for only 1–2 minutes. They should just begin turning pink because they will finish cooking in the oven. 12. Add the diced tomatoes, chicken broth, Worcestershire sauce, and butter. 13. Stir in the cooked rice until everything is evenly coated in the Cajun mixture. 14. Taste and adjust the salt and pepper. 15. Remove the partially baked peppers from the oven. 16. Generously fill each pepper with the Cajun shrimp, sausage, and rice mixture. 17. Sprinkle pepper jack and cheddar over each stuffed pepper. #StuffedPeppers #CajunRecipes #ShrimpRecipes #LouisianaCooking #DinnerIdeas
