Creamy chicken and chorizo loaded mash 🤤 the perfect comfort food that’s ready in less than 30 minutes! 📌 600 cals, 9g fibre, 45g protein For the topping: 115g chorizo (skin removed and chopped) 2 chicken breasts (roughly 400g raw weight) 1 red onion (diced) 3 garlic cloves (roughly chopped) 300ml chicken bone broth 2 tbsp plain flour 1 tsp paprika 300ml reduced fat creme fraiche Salt & pepper to taste For the mash: 400g raw white potatoes 60ml skim milk 180g tenderstem broccoli 1. Peel your potatoes and cut into round then put into a pot of cold salted water and bring to the boil. 2. Add the chorizo to a cold pan, then turn on to a medium heat and cook the chunks until golden and beginning to release the fat, then remove from the pan, leaving the fat in the pan. 3. Brown the chicken in the fat and remove from the pan once almost cooked. 4. Toss in the onion and cook until soft, then add the garlic and paprika and cook for another few minutes until fragrant. 5. Mix in the flour, stirring continuously to cook the flour, then slowly add the chicken bone broth/stock until a thick sauce forms. 6. Reduce the heat right down and add the creme fraiche and stir until full combined. 7. Add the chicken and chorizo back into the sauce and allow to simmer until the chicken is fully cooked. 8. Mash the potatoes with milk once very soft (the softer the better IMO) 9. Season to taste and ENJOY! #comfortfood #EasyRecipe #EasyRecipes #DinnerIdeas #dinner
