If you are counting physical distress i would say beat saber, if you are counting in general then geometry dash.

from a maxing out mechanics perspective? Project DIVA is extremely interesting in this regard as theres both a completion% and a numbered score, each of which is maxed out differently. its also the only rhythm game I know of that is so mechanically complex that max scores on certain charts are only achievable by intentionally missing notes. most songs have multi-step routes that are unique to each song (and usually differ whether you are maxing out % or score!) Project DIVA is a very easy game to understand on a base level, and even perfecting/FCing a song isn't terribly difficult. But the game is so mechanically complex once you get into maxing out scores that it requires literal frame-by-frame analysis, intentional combo breaks, and skewed accuracy to max out certain hold bonuses. Not to mention that certain maxes are impossible on arcade cabinets due to the physical complexity. Also there's a very interesting theory called Manufacturing Drift which means that some arcade cabinets are entirely technologically unable to achieve max scores by around 10-50 points just because of how they were made😭 Project DIVA is mental. So sad she's been discontinued, we'll never have another rhythm game like this🙏

I'd say from a pure mechanics standpoint, beatsaber is probably the top, the scoring system is so brutally precise, the easiest vanilla map has still never been 100% passed. combine that with the physically demanding nature, even ai hasn't scratched the skill ceiling. from a competitive viewpoint, osu is probably the hardest to get into the triple digits
