Let them cool completely, then grind them into a fine powder. Method for Kabsa Rice 1. Heat 1 cup oil in a pressure cooker and add 2 finely chopped onions. Fry until dark brown. 2. Add 1 tbsp ginger paste and 1 tbsp garlic paste, and fry briefly. 3. Add 2 bay leaves, 1 large cinnamon stick, 2 green cardamoms, 3 cloves and 4–5 black peppercorns. 4. Add 1 kg chicken thigh pieces and fry for a few minutes. Do not add water at this stage so the onions can become darker. 5. Add the purée made from 2 large tomatoes and 2 tbsp tomato paste. 6. Add 1 tbsp salt, 1½ tbsp coriander powder, ½ tsp turmeric, 1½ tsp paprika, 1 tsp black pepper powder and 2 tbsp Special Kabsa Masala. 7. Add 1 chicken stock cube and water. 8. Add 3 dry lemons (Loomi). 9. Once the mixture comes to a boil, cook the chicken for about 10 minutes, allowing its flavour to infuse into the yakhni. 10. Remove the chicken from the yakhni. 11. Mix oil, tandoori masala and lemon juice, then coat the chicken well. 12. Bake at 200°C for 20 minutes. Alternatively, cook the chicken on a tawa. 13. Wash 1 kg basmati rice and add it to the prepared yakhni. 14. Add 1 whole garlic bulb — optional. 15. Add double the quantity of water compared with the rice for soft, juicy and slightly sticky rice. 16. When the water has almost dried and only a little remains, close the pressure cooker. 17. Cook on low to medium flame until 2 whistles. Alternatively, cook on dum for 20–25 minutes. 18. Once cooked, place the baked chicken on top of the Kabsa rice and serve. Quick Kabsa Chutney Ingredients * Tomatoes — 2 * Lemon juice — as needed * Fresh coriander — 1½ tbsp * Black pepper powder — a little * Paprika powder — ¾ tsp * Vinegar — ¾ tsp * Garlic — 1 tsp * Salt — to taste * Olive oil — 1 tbsp Method Add all the ingredients to a blender and blend until smooth. Serve with the Kabsa rice and chicken.
