I’m Italian so I put 2 cloves of garlic in with the boiling potatoes, then mash them right into the potatoes! But there’s definitely a million ways to make them!

Why russets? Yukon Gold are best. Or other all-purpose spuds. Receipts are fine if that’s what you love, but generally they are best for baking.
