It’s surprisingly hard to find a slow cooker recipe I love that isn’t full of cream-of-something soup. This Slow Cooker Sesame Ginger Beef is one of the good ones: 10 minutes of prep, fall-apart tender beef, and a sweet, savory, glossy sauce. Even my very discerning grandma loved it, which carries some weight around here. SLOW COOKER SESAME GINGER BEEF 2 pounds beef stew meat ½ cup low-sodium soy sauce or tamari ⅓ cup packed brown sugar ¼ cup beef broth 1 tablespoon toasted sesame oil 4 cloves garlic, minced 1½ tablespoons freshly grated ginger 1 tablespoon rice vinegar ½ teaspoon red pepper flakes, or more to taste 1 tablespoon cornstarch Add the beef to your slow cooker. Pour the soy sauce, brown sugar, beef broth, sesame oil, garlic, ginger, rice vinegar, and red pepper flakes over the top. Cover and cook on low for 8–9 hours or high for 4–5 hours, until the beef is fall-apart tender. Remove ¼ to ⅓ cup of the cooking liquid and whisk in the cornstarch until completely smooth. Pour it back into the slow cooker, cover, and cook on high for another 20–30 minutes, until the sauce is slightly thickened and glossy. Serve over jasmine rice with green onions, sesame seeds, and a green vegetable. Finish with chili crisp or a drizzle of toasted sesame oil if you’d like. Save this for slow cooker season—you’re going to love this one. #slowcookerrecipe #sesamegingerbeef #beefrecipe #easyweeknightdinner
