Yes I’ve made them before but I had to again for something special…. Ingredients: Dough Yeast Mixture * 1/2 cup + 2 tbsp warm whole milk (145g), warmed to 105–110°F * 1 tbsp granulated sugar (13g) * 2 1/2 tsp active dry yeast (10g) Dough * 1 medium ripe banana, very smoothly mashed (110g) * 1 whole egg, room temperature * 1 egg yolk, room temperature * 1/2 cup full-fat sour cream or Greek yogurt (80g) * 1/2 cup granulated sugar (110g), minus the 1 tbsp used for activating the yeast * 2 tsp vanilla extract * 4 1/2 cups bread flour (550g) * 1 tsp fine salt (6g) * 1 tsp cinnamon * 1/2 cup salted butter, very soft (113g) Banana Cinnamon Filling * 1/2 cup salted butter (113g) * 1 cup light brown sugar (240g) * 3/4 banana mashed (75g) * 1 tbsp cinnamon * pinch salt Optional: * thin layer of banana puree or banana jam Brown Butter Cream Cheese Frosting * 1/2 cup salted butter browned (113g) will yield about 90-96g browned butter * 8 oz cream cheese, softened (250g) * 2 cups powdered sugar (180–240g) * 1 tsp vanilla extract * pinch salt Full recipe on my substack ❤️#bananabread #brownbutter #baking #cinnamonroll #dessert
